Edit to add this prayer request: Please be in prayer for the Steven Curtis Chapman family as their 5 year old adopted daughter Maria was killed in a tragic accident yesterday.

Tried a new recipe  lastnight from Nourishing Traditions. It is called Wheat Berry Casserole. It was surprisingly very good, the kids even liked it although may need to adjust the recipe a bit as the berries were a little bit chewy, but it was still yummy. I sprouted the wheat berries earlier this week and decided to try this recipe, I am glad it did as I wasn't to sure about before making  it, but I really want o do what I can to eat better and be healthier...anyway this casserole could almost compare to a healthy version of Rice A Roni an old time favorite in this house. Anyhow it was very easy to make, aside from the soaking, but that is becoming a way of life here so if I stay on top of the soaking/sprouting & keep the soaked grains in the fridge until it is time to use them then we will be good. It didn't look like much when I was making it, but I tell you this food is very filling and not in a ugh I feel sick kind of full, but a very satisfied fullness. In fact in the mornings I have been having a piece of toast made with either a California bread from Trader Joe's or the Ezekiel bread and that is very filling too, and todays toast was with raw butter and a scrambled egg and some sliced tomato on top and that stayed with me all day until dinner. when I ate horrible all the time I felt hungry all the time...this better eating is amazing me. I am looking at getting a book called Eat Fat, Lose Fat, by Sally Fallon...as it talks about the opposite way to lose weight then what we have always heard, and of she is right then I will be in for some good weight loss.

All these changes have been good for me as I have (as of last Friday anyhow ) lost 6 lbs...now that is not a lot of weight if you were to see me, but considering the fact that I have not lost ANY weight in years <<<(seriously it has been years) this is a true accomplishment for me...

Aside from eating better we have started going to the local pool with the kids and to use the therapy pool when we can to exercise...we started mostly as therapy for Marks knee pain he has had since the motorcycle accident in 2003...I am hoping that the exercise added to the healthy eating that maybe someday I will feel better and have lost a bunch of weight...I just want to feel better! I do not want to be like my mom when I am her age..as she is in so much pain all over her body..I want to stop the cycle as much as it is within me to do so.

6 pounds!!! That's so awesome! I want to lose six pounds real bad, lol. Congratulations Kelly!

That casserole sounds yummy. I like foods that leave me full too. I've been attempting to have oatmeal at least once a week...Lord willing it'll be good for me.

RYC:  Thank you, Kelly, for posting about the Chapmans, too!  It's good that we can all come together and lift them up in prayer!  His music, and ministry has blessed me so much over the years in my walk with the Lord. 

This book and recipe looks very good, and healthy!  Great job on your weight loss!  I know I've slowly gained weight over the years, and desperately need to lose X-amount of pounds right now, but most of all, I want to just feel better!  I've been feeling 'sluggish' lately, and kudos to anyone who will step out and challenge 'politically correct' nutrition!  :celebrate:  You need to post that recipe, too!  I like Rice-A-Roni, but we don't eat it because of the MSG ... that stuff is in everything boxed these days!
