The Joy of Watching Children Grow
I was looking through old videos and pics today and I came across this video of Joelle from just a few months back and it made me so happy. She is so cute and it has just been such a wonderful blessing to see her grow. So I have posted the video that brought me so much joy today of the little apple queen.

She was just beginning to say things more clearly, and so I was saying words I knew she knew so that she would repeat them. Now she is making full sentences herself almost. It is amazing to see how much she has grown since the Summer only. My husband also uploaded a video lastnight for the pleasure of any Risk fans and or Stephen fans or really for anyone who wants a giggle so take a peek.

Chewy Caramel
Ingredients:
- 1 cup butter or margarine
- 1 pound light brown sugar
- 1 (14 ounce) can sweetened condensed milk
- 1 cup light corn syrup
- 1 pinch salt
- 1 1/2 teaspoons vanilla extract
So you put all the ingredients into a heavy bottomed sauce pan - or whatever saucepan you have - except the Vanilla. Then you mix them altogether over medium heat until they reach the softball stage. Your sugar thermometer should tell you what temperature that is - its about 116 degrees celsius. Take it off the boil and stir in vanilla. Then you leave it cook at that temperature for about three minutes and then you pour it out into a well-greased tin. Wrap in cling film after it has set.
Anyway I just made it once. I got the recipe off the internet. It was really yummy and it made alot. In fact I still have some left. Its great for pancakes, caramel apples and caramel popcorn and just for eating.
I used Golden Syrup instead of Corn Syrup as we dont have corn syrup in Ireland.
I think it would taste really good on top of Graham Cracker with choclate on top. I never got to try this I didnt have any bran to make Graham Crackers
but feel free to try it for me and let me know how it comes out.
