    Chewy Caramel

    Ingredients:

    • 1 cup butter or margarine
    • 1 pound light brown sugar
    • 1 (14 ounce) can sweetened condensed milk
    • 1 cup light corn syrup
    • 1 pinch salt
    • 1 1/2 teaspoons vanilla extract

     

    So you put all the ingredients into a heavy bottomed sauce pan - or whatever saucepan you have - except the Vanilla.  Then you mix them altogether over medium heat until they reach the softball stage.  Your sugar thermometer should tell you what temperature that is - its about 116 degrees celsius.  Take it off the boil and stir in vanilla.  Then you leave it cook at that temperature for about three minutes and then you pour it out into a well-greased tin.  Wrap in cling film after it has set.

     

    Anyway I just made it once.  I got the recipe off the internet.  It was really yummy and it made alot.  In fact I still have some left.  Its great for pancakes, caramel apples and caramel popcorn and just for eating. 

     

    I used Golden Syrup instead of Corn Syrup as we dont have corn syrup in Ireland.

     

    I think it would taste really good on top of Graham Cracker with choclate on top.  I never got to try this I didnt have any bran to make Graham Crackers  but feel free to try it for me and let me know how it comes out.

I actually had forgotten about the last time Stephen had come home so early. I like your new theme background!

    Hey Wendy.  Thanks for joining me.  This is the caramel I was talking about.  Posted it especially for you.  I just remelt it when I need it - like for the popcorn.  I just cut up pieces of it for the pancakes and it melts on them.  Its quiet versatile.
