But Isn't Low-carb Expensive?
There have been a few comments I've received (on my original post about low-carbing on CynaraJane) asking if low-carb eating isn't expensive.
For me, I actually save money eating this way, as opposed to buying all the overly processed "carbage" I used to buy at the grocery. But, how can that be, you may ask, as meat is so expensive?! Well, because I'm not picking the leanest cuts - - those are what are expensive - - the ones where all the good fat has been trimmed away. Knowing that in this low-carb way of eating that fat is actually a good thing, I happily buy the more fatty, less expensive cuts of meat. My very favorite is Boneless Beef Chuck Western Style Ribs:
They are also often on sale where I shop, making them an even better bargain. I also get skin-on chicken for less than a dollar a pound, unless I'm getting a package of wings (also a favorite of mine), which are a little more expensive. I don't eat a lot of lobster or salmon (typically higher priced as far as protein selections go), and only indulge in those occasionally (but I do love them!).
Shopping the perimeter aisles is a great strategy...fresh low starch, high fiber or high fat veggies, fatty meat, fatty dairy (heavy cream...MMM!)...all good for a low-carb way of eating, and when you're not buying potato chips, Dorito's, donuts, cookies, etc. located in the interior aisles, you will find your grocery bill and your waistline dramatically reduced!
Here is a yummy low carb recipe I'd like to share, contributed by . I'll add it to the recipe site for those who like to access the recipes there, as well.
Yummy Shrimp Salad
Ingredients:
2 hard boiled Eggs
Peeled Shrimp *to taste*
1 peeled diced avocado
Mayo
Salt and pepper
Diced onion
Diced celery
Add together and stir well.
Yummy, and oh so low carb!

Egg-citing!
I received a question about eggs. Do I eat a lot of them? Yes! I eat eggs whenever the mood strikes me. When I first started a low carb way of eating I ate a lot more of them than I do now (I think I got a little burned out on them since they were a meal I could make portable, and make fairly quickly, so I had them a lot).
But, I don't limit my egg intake. There was a time when the popular wisdom said that we should limit our egg consumption due to the amount of cholesterol in eggs, and the possible effects on blood cholesterol in humans. That's been proven to be B.S. (see this link).
Eggs are a valuable source of protein, essential vitamins A, D, E, and B group, as well as minerals iron, phosphorus and zinc.
Throw away the Eggbeaters®, as they are only the egg white and you'll be missing the greatest source of nutrients in the yolk. Eat whole eggs to get the biggest bang for your nutritional buck. I have been known to use egg whites for a recipe, saving the yolks for use in a big ol' omelette the next morning (or even for supper if the mood strikes)!
Matter of fact, that sounds like a good idea for supper tonight. Mmm, eggs!
