| long time..wow, time has been flying by so fast.. we went to our first parents night at jt's preschool. it was crazy and surreal... even though he's been in child care, it felt so official and we got to meet the other parents and match kids to parents. jt also started mini sports blitz which means he's doing t-ball, soccer and basketball on saturday mornings.. bubba goes with us and it's kind of parent and child participation so i get to be photographer while jt and dad run around. the class is 2-3 year olds so jt and his womb buddy, L, are the little runts of the class but they hang in there.. i'm completely suprised by how well jt takes direction. and he's got quite a throwing arm, if you ask me 
he's SOO very verbal right now.. and i've been telling everyone that the kid has his own sense of humor. he cracks me up and he's just very sweet and loving (most of the time)... he still drives me crazy sometimes but it's gotten so much easier. thinking about where we've come from, we're doing very well right now..
we're headed back to chicago in about a month for my cousin's wedding - can't wait... and the best news - i found out that my lovely cousin, my confidant and my little dongseng got a job in oakland so that's one step away from SOCAL!! i'm so thrilled... she's hoping to transfer over here soon and i can't wait!!!
oh and i totally rocked the KID ROCK CONCERT last week. hahahhaah... it was soooooooo much fun. great concert... people are so surprised when they heard i went to kid rock cuz i guess i look like someone who totally doesn't listen to him but i LOVE kid rock. his face is not attractive to me but the man has MAJOR sex appeal, in my opinion. mmm mmmm something about him does it for me. he'd be a fun person to romp around for an afternoon with! kekkekeke.. .awwww yeah~~~~
hope to update more often.. i finished a photobook lately so uploading is a major turn-off to me. i dont' know how some of you picture moms do it.. it's so frustrating to me!!! arrgh

| bob the builder~ and buffalo salmonwe had a pretty good weekend... we went to see bob the builder at the discovery science center before it left... it was the very first time that jt took a picture with a character dressed up!! he did so well.. i was very proud. when we went to disneyland, not a chance.. he even saw bob the builder up close before but that was in the beginning of the summer... in just a few months, he has grown the confidence, i guess..
it's very cute - he's been saying that "he a big boy"... hahaha except when i remind him that big boys go in the potty, all of a sudden he realizes he doesn't want to be a big boy... he's been having a great time at his new school and now his friend jc goes 4 days a week so he sees him even more... i think overall jt had a great summer! we did a lot..
my dad and his new..... partner? ugh, it's still so awkward to call her a stepmother or even my dad's new wife... anyways, they came to visit last weekend... it was a nice visit and jt had a great time... but in the back of my mind, i realize that jt will not know my mom as his grandmother... sure, i'll tell him all about her and we do have a few pictures but in his memory, she'll be a grandma that passed away when he was a baby.... no memories of her.. that's pretty painful for me to deal with.... but i'm glad his love is just very open and free. the beauty of innocence and childhood.... there are so many things that are beautiful about how a child sees things through their own experiences... jt is very friendly and doesn't yet discriminate against anyone... what a lesson to learn..
i've also been cooking a ton lately.... here's a recipe i tried last week. everyone liked it - bubba, jt and even my cousin! it was very simple and i was suprised at how well panko tasted on the salmon. i wouldn't have thought of it myself. it's from gourmet magazine. i served it with the suggested sauteed watercress and some garlic noodles... yum....
buffalo salmon

Makes 6 servings

5 tablespoons unsalted butter
1/4 cup hot sauce such as Frank's
Redhot
1/3 cup panko (Japanese bread crumbs)
1 tablespoon vegetable oil
1 (2-lb) piece salmon fillet with skin

Preheat oven to 425°F with rack in
upper third. Lightly oil a shallow baking pan.
Melt butter with hot sauce and
1/4 teaspoon each of salt and pepper over medium heat. Set aside 1/4 cup sauce.
Toss panko with oil in a bowl. Put salmon, skin side down,
in baking pan and sprinkle with 1/4 teaspoon each of salt and pepper,
then brush with remaining sauce. Sprinkle panko evenly over top of fish, then bake until panko is golden and fish is just cooked through, 16 to 22 minutes. Serve reserved sauce on the side.
sautéed watercress

2 tablespoons peanut or vegetable oil, divided
3 tablespoons pine nuts
2 garlic cloves, finely chopped
3/4 teaspoon ground coriander
1/4 teaspoon hot red-pepper
flakes
3 bunches watercress (1 lb), cut into 2-inch pieces

Heat 1 tablespoon oil in a 12-inch
heavy skillet over medium-high heat until
it shimmers, then cook pine nuts with
1/4 teaspoon salt, stirring, until golden, about 2 minutes. Transfer with a slotted spoon to a small bowl.
Add remaining tablespoon oil to skillet, then sauté garlic, coriander, red-pepper flakes, and 1/4 teaspoon each of salt
and pepper over medium-high heat until spices are fragrant, about 30 seconds.
Add watercress and sauté, turning with tongs, until wilted, 3 to 4
minutes. Season with salt and pepper. Serve sprinkled with pine nuts.

| lucie's here!one of my best friends, m, had her 2nd baby this week.... she waited all this time to find out the sex of the baby and i think it was killing me more than the parents!! they had another baby girl so they have 2 darling daughters... i have a running joke with M that she always likes to "steal" things from me like a bookbag i like, diaper bag, jacket.. so she told me not to tell her my girl name in case she stole it too... bubba did not believe she would actually steal our name but i told him i would not risk it.. kekeke... so even though she's on hiatus for a minute from having kids, i'm gonna keep my mouth shut for a while. you never know!
finally after a long time of only bad news in my life, i have happy things to look forward to... m had her baby, another co-worker is expecting a baby, my cousin is getting married in nov, another friend getting married next summer and a co-worker who just got engaged! i'm hoping to have some good news of my own soon. we're definitely ready to have #2.... we've been trying this "going for a girl" method but i think this month, we're both getting a bit impatient so we're just gonna go for it... i bought this crazy saliva ovulation predictor and it really works. it GROSSED me out at first because your saliva goes from looking like dots and bubbles to crystallized sticks/branches.. ewwwwwww.. but yeah, i'm hoping to get preggos before halloween because that's around the time we concieved jt and i don't want their birthdays too close.. i'm trying to psych myself up for the fact that i may end up with another son but i REALLY REALLY REALLY want a daughter.. especially with losing my mom, i really want a mother-daughter relationship again, even if it means i'd be the mother... i always wanted a son first and a daughter second so i'm praying that it happens for me...
jt has been GREAT these days. this morning, he rode his bike and we walked to our neighborhood breakfast place, he sat in a booster, ate his pancakes and eggs, put his helmet back on and rode all the way home.. it was just such a great little trip with NO drama, no misbehaving... bubba and i were just so thrilled that we could have such a pleasant morning with jt.. not that jt is that bad, he's just sooo freaking curious and active that it's hard to keep him calm and in control sometimes... i notice that he does a lot better when we give him some credit that he's going to behave and we relax too.. i feel more ready to have a 2nd after today's morning but i know that these things are very temporary. one good day could change after nap time!
it's good to be back... kinda.. .i've had doubts about blogging again.. but just for my own sanity, i think i need to do this more...

| too good to be truei know i'm not typically "motherly" and i do have a tendency to complain about jt a lot but he really was a handful for a while...
BUT... i'm almost afraid to say it but he has just been amazing this whole week... i know now that i've "said" it, he's gonna wake up a monster.. but truly, he has just been so sweet and fun and communicative and understanding... sure, he doesn't listen to me sometimes when i ask him to do stuff.. but it's all normal stuff i can deal with... he rarely gets really upset and is quite fine just hanging out by himself. he's back to the calm and zen baby that i remember... it was a rough 5 months there but i'm glad we're going through smoother times... i know it'll keep going up and down for our lifetime.. but i'm really appreciating him a lot right now so leave me alone.. kekeke..
i came home, cooked dinner and while bubba and jt watched lakers, i went to the americana by myself and strolled around... picked jt up some stuff at lucky kid (they were having some kind of event) and a book and just hung out by myself. it was lovely... i'd rather be home alone by myself but bubba never leaves anywhere with jt alone so i have NOT had that since his birth... i CRAVE alone time at home... maybe one day.. *sigh*..
anyways, i tried a great recipes from kalyn's kitchen website, which i really like.. it's her roasted tilapia with black bean, mango, lime and cilantro salsa! Here it is for easy reference..
Roasted Tilapia with Black Bean, Mango, Lime, and Cilantro Salsa (Makes about 2 cups salsa, salsa recipe created by Kalyn with inspiration from this recipe featured by the National Mango Board, who provided the mangos used to test this recipe.)
4 pieces Tilapia
Salsa: 1 can black beans, rinsed and drained well 1 mango, peeled and diced 1/4 cup green onion, very thinly sliced 1/2 cup chopped cilantro (about half a bunch of cilantro) 2-3 T fresh lime juice 2-3 T olive oil 1/2 tsp. ground cumin 1/4 tsp. hot sauce (I used Sriracha sauce)
Follow instructions for World's Easiest Roasted Tilapia to cook the Tilapia.
Before
you start to roast tilapia, pour canned black beans into a colander
placed in the sink, and rinse well with cold water until no more foam
appears. Let beans drain, then blot dry with paper towel if they still
look wet.
Cut mango
flesh away from the pit, cutting along both sides of the flat oblong
shaped pit. (Here are excellent instructions for How to Cut a Mango
from Simply Recipes.) Cut mango into 1/2 inch dice and place in plastic
bowl. Add drained black beans, thinly sliced green onion and chopped
cilantro.
Combine 2 T
lime juice, 2 T olive oil, cumin and hot sauce in small bowl, and whisk
together. Mix into black bean mixture. Check to see if the mixture
seems too dry, and add a bit more lime juice and olive oil if needed.
Serve black bean and mango salsa spooned over hot roasted Tilapia.
