Bahm (Chestnuts)
When I was 3 and my brother was 2, my parents moved to America without us to set everything up before we were to join them. In the meantime, my brother and I lived with my aunt and her family in the total she-gol (countryside) of Korea for a couple of months. Our neighbors had cows, pigs, horses... but one of my favorite memories were the chestnut trees that would be bursting with chestnuts come winter.
Though I love them roasted on an open fire
, steaming chestnuts is probably the easiest way to cook them. Simply wash the nuts. Place a small amount of water in a pot, put in a metal steamer with the chestnuts. Place a lid on the pot and bring it to a boil, then lower the heat and allow it to simmer for 30 minutes. You'll have super soft chestnuts that you can just bite right into.Sorry for all these sucky noncooking posts! I just got back from LA where my parents' jindo had puppies! Read about that here.
I work a lot so I just don't cook anymore, but this week I'll be making some al jjigae. I think that would be called Pollack Roe Stew? Stay tuned!

This entry was so timely. The chestnuts we bought were just sitting on our counter for a week since we didn't know what to do with them. I've been meaning to call my dad, but you've answered that for us. I love al jjugae. Let me know how that turns out. Thanks for your help!
Chestnuts are one of the things that makes me think most about this time of year. I think my mom would usually bake them, but now that I don't have an oven, I'll have to try the steaming thing! Oh, word to the wise... if you buy chestnuts in Korea keep on the lookout for grubs... I had quite an infestation!
Totally forgot it was chestnut season! Gotta go get some now, haha. I eat 'em boiled, cut in half, and dig out the meat with a spoon... yum~
i want some! brings back memories of childhood...

My mom loves these.
Thank you--what a timely post! We just got chestnuts and have been peering at them, wondering how to cook them. Also--Jindos! I grew up with them, they are AWESOME dogs.

bahm reminds me of my halmoni...i'm nostalgic now!
My mom roasts them in a fire and we see who is man enough to hold one the longest after it comes out...
then we eat it and see who can stand the heat on their tongue...
my family is a little weird...
I just boil them....haha But yea I like them roasted too.
my grandma used to peel these for me when i was young. she used to call me a "bahm ji" (chestnut mouse) because i liked them so much. ah, memories. :)

I love bahm! you can use them as part of your stuffing for your turkey.
Do Koreans have any sea urchin dishes? I'd like to see a feature on that, please!
Aren't you best to score them first? I thing they would pop otherwise, but maybe not????
