It's absolutely gorgeous outside and I'm stuck in a closed room with the curtains staples shut. It's not right, I tell ya.
Dinner last night was fun and the food was fab. Next time I might get mizithra for the whole thing, because I kept wishing there was more of that and less of the meatball side.
Yesterday I did a lot of cleaning, tended my plants, and planted a bunch of seeds. I planted peas and two kinds of tomatoes. They are under grow lights on my kitchen counter for now. I've grown both tomatoes and peas this way before, so we'll see how it goes. I also grew impatiens from seed under grow lights one time and then transplanted them to a flowerbed. I don't expect them all to do well, but I still may end up with an abundance of tomato and pea plants in a few weeks. Good thing my family likes tomatoes and peas. If they do grow, I'm going to have to clean out my closet and grow them under lights in there, a la Bobby Hill, because I don't have space outside for more than a few plants.
Speaking of food, I'm making chicken and rice for dinner. I bought these frozen grilled chicken strips at Costco, and you just throw them in the microwave or cook them on the stove. They are surprisingly good.
I really dislike plain white rice, so I'll give you my rice recipe. Keep in mind I'm no Tom Saaristo, and neither is my great aunt, who taught me to make this:
½ cup onion
2 tablespoons butter or margarine
1 cup white rice (or experiment with other kinds)
1 ½ cups chicken or beef broth (or other stock I guess)
In medium-to-large saucepan, melt butter. Add onion and cook just until soft. Add rice and mix until all rice is coated with butter. Add broth, heat to boiling. Reduce heat to lowest setting and cover. Cook 15-20 minutes (17 is the magic number for me).
I don't know where she got the recipe. Tom, if it's yours (though everything you come up with is so much more imaginative), my apologies.

Have you heard Laura Cantrell's music? There are four great free downloads at Amazon. Based on the artists you've talked about, I think you would like her.
Do you eat ground beef? The recipe you have is similar to mine. The only thing missing is the beef.

Ha, ha, ha, ha.... I'm sorry I caused you suffering because of my question. Maybe it will give you a new episode for the sitcom.
On recipes-- After failing to find a Georgian (Russian) restuarant in PDX or SEA (I had heard there was a new one in SEA), I started pulling off recipes for this "garlic pressed chicken" (don't know what its really called in Russian/Georgian) we had in a Moscow restaurant. It was the best thing I've ever tasted in chicken. I'm going to try out a couple of them to see if it rings any bells. I'll report back when its done.
Oh-- forgot to say, We love Kathy's simple chicken and rice recipe. Basically its a combo of 1 c. dry rice in the bottom of a pan, 1 whole cut up chicken (skin or no skin your choice) cover with 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 package dry California onion soup, 1 cup of water, cover with foil and bake for 2 hours @ 350. (fattening, lots of sodium but really tasty).
If we don't have the dry soup mix, we fake it with probably 1 tsp granulated garlic, 3-4 T dried minced/chopped onion, 1 tsp salt.
That version sounds really, really good. Hmmmm.
I'm going to try to stop by the Tigard Costco today to checkout the grills.

I so wish I could grow things..Not only can I not grow anything, but I also can't keep anything (that's already grown) alive. Good thing I don't want kids.

everybody's planting seeds already and i'm bummed. i'm having company this weekend so i don't have time to devote to tooling around in the flower bed. we (and when i say 'we' i mean my husband) are in the middle of putting the finishing touches on a major-pain-in-the-arse remodeling project.

That recipe sounds good. We make something pretty similar to that. yummy!
I am amazed at people who grow gardens. I was actually contemplating planting a garden this spring, but I am so busy. I am inspired though. Maybe I will give it a try.
Being Asian, nothing is better than the sweet smell of freshly cooked plain white Jasmine rice. Ahh...
P.S. NOT the kind you find at most fast food Asian restaurants. The good quality stuff...especially from South East Asia...

I eat rice almost everyday for years now, so by now I've perfected my rice into an art form. I have many suggestions. My latest discovery is lemon peels- just very thin shards of the peel, with a little coriander, (which I hate when not cooked, but it tastes lovely when cooked.), sea-weed salt, black pepper. There's a herb M bought in South Africa, that is simply divine. I'll try to see what's in it and let you know, since it does wonders to plain white rice.
Another option is frying onions, tomatoes, grinding a clove of garlic. Add salt, pepper etc, and then when the fluids begin to bubble, add your rice. Turmeric is optional, but it makes it taste like a moroccan dish so I recommend.
